Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 lemon (zest and juice)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs (like basil or parsley) for garnish
Equipment Needed
- Frying pan
- Meat mallet or rolling pin
- Mixing bowl
- Cutting board
- Chef’s knife
Step-by-Step Instructions
The first step is to flatten the chicken breasts to an even thickness so they cook quickly and evenly. I like using a meat mallet, but a rolling pin works too! After that, I season the chicken with salt and pepper before heating a splash of olive oil in my frying pan over medium heat. Once the pan is hot, I add the chicken and cook for about 4-5 minutes per side until beautifully golden and cooked through. It smells absolutely incredible!
