  • A generous pinch of salt

Let’s talk ingredients for a second, because a few small choices here make a huge difference. I’ve tried this with natural cocoa powder, but trust me, splurging on a good Dutch-processed cocoa powder gives these cookies a deeper, darker chocolate flavor that’s absolutely worth it. For the buttermilk, if you don’t have any, you can make a quick substitute by adding 1 tablespoon of white vinegar or lemon juice to a cup of milk and letting it sit for 5 minutes—it works perfectly.
