Baked Potato Skins

Ingredients

– 4 large russet potatoes
– Olive oil
– Salt
– Pepper
– 1 cup shredded cheddar cheese
– 1/2 cup cooked bacon bits
– 1/2 cup sour cream
– Chopped green onions (for garnish)
– Optional: jalapeños, diced tomatoes, or any favorite toppings

Step-by-Step Instructions

First, I preheat my oven to 400°F (200°C). While it’s warming up, I take my russet potatoes, give them a good scrub under running water, and dry them with a towel. Pricking the potatoes with a fork a few times helps steam escape while they bake. I then rub them generously with olive oil and sprinkle some salt over the skin. They go onto a baking sheet, and into the oven, they go for about 45-60 minutes, until they’re fork-tender. The smell of baking potatoes is one of my all-time favorites!
