- 1 pound ground beef (or turkey for a lighter option)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 cup frozen corn
- 1 cup green beans, chopped
- 1 teaspoon dried Italian seasoning

Step-by-Step Instructions
First things first, I start by browning the ground beef in my large soup pot over medium heat. This is one of my favorite parts because I love hearing that sizzle as the meat cooks. Once it’s nicely browned, I drain any excess fat and add in the chopped onions and minced garlic. The aroma that fills my kitchen is simply divine!
