Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 cup cooked rice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheddar cheese
- 1 cup crushed tortilla chips
- Fresh cilantro for garnish (optional)
Equipment Needed
- Large skillet
- 9×13-inch baking dish
- Wooden spoon or spatula
- Mixing bowl
- Oven mitts
Step-by-Step Instructions
First, preheat your oven to 350°F (about 175°C). In a large skillet over medium heat, cook the ground beef until it’s browned; this usually takes about 7-10 minutes. As it cooks, sprinkle in the chili powder and cumin to give it that hearty kick. Once the beef is browned, drain any excess fat and add in the black beans, corn, salsa, and cooked rice. Stir everything together until well combined, and let it simmer for a few minutes to meld the flavors. This is where my kitchen starts smelling incredible! (See the next page below to continue steps…)
