Step-by-Step Instructions
First, I preheat my oven to 375°F (190°C) and line a baking sheet with parchment paper. There’s nothing worse than cheese glueing your creations to the pan—I learned that the hard way! Then, I pop open that can of biscuit dough (the thwump never gets old) and gently stretch each biscuit into a rough 4-inch circle right in my palm. It doesn’t have to be perfect, but giving it a little stretch creates more room for the good stuff and makes sealing much easier.
Now for the fun part: the filling. In a bowl, I combine the shredded mozzarella, chopped pepperoni, Parmesan, and marinara sauce. I mix it with a fork until it’s a cohesive, cheesy, red-flecked mess. Here’s my tip: don’t overdo the sauce. A heaping tablespoon per bomb is plenty. Too much, and it will seep out and burn during baking. I learned this after a batch of slightly charred bottoms! I place a generous spoonful in the center of each stretched dough circle.
The sealing is the crucial step. I pull the edges of the dough up and over the filling, pinching them firmly together at the top to form a little purse or bundle. I really press and twist to ensure it’s completely closed. If there’s a tiny gap, the cheese will stage a great escape. I place each bomb seam-side down on the prepared baking sheet, giving them a little pat to flatten the bottom so they sit nicely.
Finally, I mix the melted butter with the Italian seasoning and garlic powder. Using my pastry brush, I generously coat the top of each bomb with this heavenly mixture. This is what gives them that gorgeous golden color and incredible aroma. I bake them for 14-18 minutes, until they are puffed up and a deep, glorious golden brown. The smell at this point is absolutely torturous in the best way. I let them cool for just 5 minutes on the sheet—they are molten lava inside!(See the next page below to continue…)
