Ingredients
– 1 pound ground beef
– 2 cups mashed potatoes (homemade or store-bought)
– 1 cup shredded cheddar cheese
– 1 tablespoon taco seasoning
– 1 cup diced onions
– 4 large flour tortillas
– ½ cup sour cream (optional)
– Olive oil for cooking
– Salt and pepper to taste
Equipment Needed
– Large skillet
– Mixing bowl
– Potato masher (if making homemade mashed potatoes)
– Spatula
– Grater (for cheese)
– Aluminum foil (for wrapping burritos)
Step-by-Step Instructions
To start off, heat a large skillet over medium heat, and drizzle a little olive oil to coat the bottom. Once the oil is hot, add in the diced onions. I absolutely love the aroma that fills my kitchen as the onions start to sauté and turn slightly golden! After about 2-3 minutes, add in the ground beef. Break it up with your spatula, season with salt and pepper, and cook until it’s fully browned. Once browned, drain any excess grease and stir in the taco seasoning, combining it well with the beef. Let this cook for another couple of minutes to allow the flavors to meld together. (See the next page below to continue steps…)
