Cheesy Rotel Tacos for Taco Tuesday

Ingredients

– 1 pound ground beef (or turkey)
– 1 packet taco seasoning
– 1 can (10 oz) Rotel diced tomatoes with green chilies
– 1 cup shredded cheese (cheddar or Mexican blend)
– 8 taco shells (hard or soft)
– Optional toppings: shredded lettuce, diced onions, sliced jalapeños, sour cream, or guacamole

Equipment Needed

– Large skillet
– Wooden spoon or spatula
– Measuring cups
– Taco shell holder (optional, but helpful!)
– Baking dish (if heating taco shells)

Step-by-Step Instructions

To start, heat your large skillet over medium heat and add the ground beef (or turkey). As it sizzles, use the wooden spoon to break it apart. Cook until it’s browned all the way through, which usually takes about 5-7 minutes. At this point, I love the smell of the meat cooking—it just gets me in the mood for tacos! Once it’s browned, drain any excess fat if necessary. Next, sprinkle in the taco seasoning and stir in the Rotel diced tomatoes (juice included). The colors are so vibrant, and it really starts to smell heavenly in my kitchen! (See the next page below to continue steps…)
