Ingredients
- 2 cups cooked and shredded chicken (rotisserie works great!)
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 large flour tortilla
- 1 small corn tortilla
- 1 cup lettuce, shredded
- ½ cup diced tomatoes
- ¼ cup sour cream or your favorite sauce
- Seasoning: garlic powder, onion powder, salt, and pepper to taste
Equipment Needed
- Large skillet
- Spatula
- Mixing bowl
- Knife and cutting board
- Aluminum foil (for keeping warm)
Step-by-Step Instructions
To start off, I like to heat my large skillet over medium heat while I prepare the filling. In a mixing bowl, combine the shredded chicken with your favorite seasonings—I usually go for garlic powder, salt, and pepper. The aroma fills my kitchen, and I can’t help but sneak a taste! Once the chicken is well seasoned, I mix in some of the crushed tortilla chips and shredded cheese, which adds a delicious crunch and gooeyness. (See the next page below to continue steps…)
