Crockpot Chicken Thighs with Potatoes & Carrots

Ingredients

– 4 bone-in chicken thighs
– 4 medium-sized potatoes, peeled and cut into chunks
– 4 carrots, peeled and sliced
– 1 onion, diced
– 3 cloves of garlic, minced
– 1 cup chicken broth
– 1 teaspoon paprika
– 1 teaspoon thyme
– Salt and pepper to taste

Equipment Needed

– Crockpot
– Cutting board
– Knife
– Measuring cups and spoons
– Mixing bowl

Step-by-Step Instructions

To start, I like to prepare all my ingredients ahead of time. This means peeling and chopping the potatoes and carrots, dicing the onion, and mincing the garlic. The moment I slice into those vegetables, I can’t help but inhale their earthy scents—it’s one of my favorite parts of cooking. Once everything is ready, I place the chicken thighs in the bottom of the crockpot, and then I layer the potatoes, carrots, onion, and garlic right on top of the chicken. The colors look so vibrant and cheerful! (See the next page below to continue steps…)
