Ingredients
– 2 lbs flank steak, sliced into thin strips
– 1 bell pepper (red or green), sliced
– 1 onion, sliced
– 3 cloves garlic, minced
– 1 cup beef broth
– 1 cup soy sauce
– ¼ cup brown sugar
– 2 tablespoons cornstarch
– 2 tablespoons vegetable oil
– 1 teaspoon black pepper
– Salt to taste
– Cooked rice (for serving)
Equipment Needed
– Crockpot/slow cooker
– Cutting board
– Sharp knife
– Measuring cups and spoons
– Large mixing bowl
Step-by-Step Instructions
To start, I recommend heating up a bit of vegetable oil in a large skillet on medium-high heat. I like to brown the beef strips for about 3-4 minutes on each side—you don’t need to cook them all the way through, just enough to give them a nice sear. This really enhances the flavor, and trust me, your taste buds will thank you! After browning, I put the beef in the crockpot along with the sliced bell pepper, onion, and minced garlic. Then I mix the beef broth, soy sauce, and brown sugar in a large bowl to create the sauce, pouring it over the meat and vegetables. Make sure all of it is well-coated!
