– 4 boneless, skinless chicken breasts
– 1 can (20 oz) of pineapple chunks, drained (save the juice!)
– 1/2 cup of soy sauce
– 1/4 cup of brown sugar
– 2 cloves of garlic, minced
– 1 teaspoon of ginger, minced or grated
– 1/4 cup of chopped green onions (optional, for garnish)
– Salt and pepper to taste

Step-by-Step Instructions
To start, I take my boneless, skinless chicken breasts and place them in the bottom of the Crockpot. Then, I pour the drained pineapple chunks right over the chicken. The sweetness of the pineapple is just divine and it envelops the chicken with flavor! In a separate mixing bowl, I whisk together the soy sauce, brown sugar, minced garlic, and ginger until it’s smooth. I then pour this delicious mixture over the chicken and pineapple, making sure everything is well-coated. The aroma alone at this stage is enough to drive me wild!
