One-Pot Smoked Sausage Pasta

Ingredients

  • 12 oz smoked sausage, sliced
  • 12 oz pasta (your choice, I like penne!)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)
  • Grated Parmesan cheese (optional)

Equipment Needed

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring cups and spoons
  • Tongs (for serving)

Step-by-Step Instructions

To kick things off, I start by heating up the olive oil in my large pot over medium heat. Once it’s hot, I toss in the sliced smoked sausage and let it sizzle until it’s golden brown and slightly crispy, which usually takes about 5-7 minutes. The aroma already is making my kitchen smell amazing! After the sausage is done, I add in the diced onion, bell pepper, and minced garlic. I sauté those until they are soft and fragrant, about another 3-4 minutes. This step really brings the depth of flavor to the dish. (See the next page below to continue steps…)
