Poor Man’s Stew

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 3 potatoes, peeled and cubed
  • 1 can (15 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup frozen green beans
  • 2 cups mixed vegetables (your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Hot sauce for serving

Equipment Needed

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Chopping board
  • Knife
  • Measuring cups and spoons

Step-by-Step Instructions

To start, heat a large pot or Dutch oven over medium heat. I like to add a splash of olive oil first, then toss in the chopped onion, carrots, and celery. Sauté these aromatic vegetables for about 5 minutes, until they’re fragrant and softened. The wonderful smell fills my kitchen, almost as if it’s inviting everyone to gather around the table. Once they’re nice and tender, I add in the ground meat. Cook until it’s browned, breaking it apart with my wooden spoon. Once the meat is browned, it’s time to throw in the potatoes, diced tomatoes, and broth. This is when the magic truly happens, and the stew begins to come together.
