Ingredients
- 1 pound ground beef (or turkey for a lighter option)
- 1 cup cooked rice (white, brown, or quinoa work)
- 1 can (15 oz) diced tomatoes
- 1 cup bell peppers, chopped (any color)
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup beef broth (or vegetable broth)
Equipment Needed
- Large skillet
- 9×13 inch baking dish
- Mixing spoon
- Cutting board
- Knife
- Measuring cups and spoons
Step-by-Step Instructions
To begin, I heat my skillet over medium heat and add the ground beef, letting it brown for about 5-7 minutes. Once the meat is no longer pink, I drain any excess fat. To that same skillet, I add in the chopped onions, bell peppers, and garlic, letting them sauté until soft and fragrant. You won’t believe how wonderful it smells in my kitchen at this point! While those cook down, I stir in the diced tomatoes, cooked rice, Italian seasoning, salt, and pepper, mixing everything together well. (See the next page below to continue steps…)
