Ingredients
– 1 lb ground beef or turkey
– 1 large onion, chopped
– 3 bell peppers (any color), diced
– 2 cups cooked rice (white or brown)
– 1 can (15 oz) diced tomatoes
– 1 can (8 oz) tomato sauce
– 1 tsp garlic powder
– 1 tsp Italian seasoning
– Salt and pepper to taste
– 1 cup shredded cheese (cheddar or mozzarella)
Equipment Needed
– Large skillet
– Casserole dish
– Cooking spoon
– Measuring cups and spoons
– Aluminum foil
Step-by-Step Instructions
To start, I heat up my skillet over medium heat and add the ground beef. I break it apart with my spoon and let it brown, stirring occasionally. Once it’s cooked through, I drain any excess fat and add the chopped onions and diced bell peppers. The wonderful smell of the sautéing vegetables fills my kitchen—there’s nothing quite like it! After cooking for about 5 minutes, until the veggies are slightly soft, I stir in the cooked rice, diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper. I let all the flavors mingle in the skillet for another couple of minutes, which is when I truly start to get excited about the wonderful casserole that’s coming together.
