Banana Oat Protein Loaf

Ingredients

– 2 ripe bananas
– 1 cup rolled oats
– ½ cup protein powder (vanilla or unflavored)
– 1 teaspoon baking soda
– 1 teaspoon baking powder
– ½ teaspoon cinnamon
– ¼ teaspoon salt
– 1 large egg
– ¼ cup honey or maple syrup
– ½ cup unsweetened almond milk (or whole milk)
– 1 teaspoon vanilla extract
– Optional: ½ cup walnuts or chocolate chips

Equipment Needed

– Mixing bowls
– Whisk
– Loaf pan
– Baking paper (optional, for easy removal)
– Oven

Step-by-Step Instructions

First, preheat your oven to 350°F (175°C) and lightly grease or line a loaf pan with baking paper. The smell of the preheating oven mixed with the fragrance of the bananas always gets my taste buds tingling! In a large mixing bowl, mash the ripe bananas with a fork until smooth. The riper the bananas, the sweeter your loaf will be, so don’t shy away from some brown spots! Next, in a separate bowl, combine the rolled oats, protein powder, baking soda, baking powder, cinnamon, and salt. Mix them well to ensure that the leavening agents are evenly distributed.
