Blueberry Cream Cheese Frosting

Equipment Needed

  • Small saucepan
  • Fine-mesh sieve or strainer
  • Electric hand mixer or stand mixer
  • Large mixing bowl
  • Rubber spatula
  • Measuring cups and spoons

Step-by-Step Instructions

We’re going to start by making a quick blueberry reduction. This step concentrates the berry flavor and removes excess moisture that would make our frosting runny. In a small saucepan, combine your fresh blueberries and the two tablespoons of granulated sugar. Cook this over medium heat, stirring and gently mashing the berries with your spoon as they soften. It will bubble and sputter a bit—that’s normal! I let mine simmer for about 8-10 minutes until it’s thickened to a loose jam consistency. Once it’s done, push the entire mixture through a fine-mesh sieve into a bowl, using the back of your spoon to press out every last drop of that gorgeous purple juice. Discard the skins left in the sieve. Let this liquid cool completely to room temperature; I usually pop it in the fridge for 20 minutes to hurry it along.

While your blueberry reduction is cooling, let’s tackle the butter and cream cheese. This next part is my favorite, but it’s also where patience pays off. In your large mixing bowl, beat the softened butter and cream cheese together with your electric mixer on medium-high speed for a full 3-4 minutes. You’re not just combining them; you’re whipping air into them until the mixture is flawlessly smooth, pale, and almost fluffy. I once tried to rush this with only one minute of mixing, and my frosting was slightly grainy from the butter. Now, I set a timer and don’t stop until it looks like a cloud.

With your creamy base ready, it’s time to bring in the sweetness and that beautiful berry flavor. Turn your mixer down to low and begin adding the sifted powdered sugar, one cup at a time, letting each incorporate fully before adding the next. Once all the sugar is in, pour in the completely cooled blueberry reduction, the vanilla extract, and the fine sea salt. Now, turn that mixer back up to medium-high and beat for another 2-3 minutes. This is the magic moment. Watch as the whole bowl transforms into the most beautiful lavender-pink color you’ve ever seen. The frosting will become light, airy, and spreadable. The aroma is absolutely intoxicating.(See the next page below to continue…)
