Excellent Taco Casserole

Ingredients

– 1 pound ground beef (or substitute with turkey or plant-based ground)
– 1 packet taco seasoning
– 1 can black beans, drained and rinsed
– 1 can corn, drained
– 1 jar (about 16 ounces) salsa
– 2 cups tortilla chips, slightly crushed
– 2 cups shredded cheese (cheddar or a Mexican blend)
– 1 cup sour cream
– Fresh cilantro, for garnish (optional)
– Sliced jalapeños, for serving (optional)

– 9×13 inch baking dish
– Wooden spoon or spatula

Step-by-Step Instructions

First, preheat your oven to 350°F (175°C). While that’s warming up, I like to get my ingredients prepped. In a large skillet over medium heat, brown the ground beef until it’s fully cooked. Use a wooden spoon to break it apart as it cooks. Once the meat is browned, I stir in the taco seasoning and follow with a few spoonfuls of water, just as the packet suggests.
